Healthy Sriracha Meatloaf

Happy Wednesday, fam!

I made this ground turkey/extra lean ground beef meatloaf last night and HAD to share the recipe. Yup, this meatloaf is easy enough for a weeknight meal. AND it makes great leftovers! It's one of those dishes that gets more flavor with time. 

I've been hesitant to share this recipe until I perfected it because meatloaf has a bad rep, am I right? You either lover it or you hate it. Either way, y'all HAVE to give this a try!

I have a secret: I LOATHED meatloaf for the longest time. I think I was scarred from the time I had it at my Grandparents and threw it up in my sisters hair while we were sleeping...sorry Jennie!!! I had a sensitive stomach as a child ¯\_(ツ)_/¯

Since then I have experimented with different ingredients and have fallen in love with this classic dish! If you are skeptical about meatloaf, just TRY it! You might like it! Also, if you're not a spicy person, just substitute regular ketchup for Sriracha ketchup :) 

I altered the recipe from my handy-dandy Better Homes and Gardens New Cook Book. I seriously use this cook book at least 2x/week! I love experimenting with recipes and finding healthy options. Check out the healthy swaps I made in the recipe below!

Cook Time: 55 mins

Ingredients:
For Loaf:
1 tbsp olive oil
1/2 cup mushrooms, diced
1/2 cup carrots, shredded
1/2 cup onion, diced
2 gloves garlic, minced
2 whole eggs, beaten
1/2 cup milk (I used lowfat)
3 tbsp Sriracha ketchup
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1/2 tsp salt
1 cup Old Fashioned oats
1 pound extra lean ground turkey (99%)
1 pound extra lean ground beef (96%)
For Glaze:
1/2 cup Sriracha ketchup
1-2 tbsp brown sugar
2 tsp Dijon mustard

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Heat olive oil in large pan over medium-high heat and add mushrooms, carrots, onions and garlic. Sauté until tender (about 5 minutes). In a large bowl, whisk 2 eggs and stir in 1/2 cup milk, 3 tbsp ketchup, 1 tbsp Dijon mustard, 1 tbsp Worcestershire sauce and 1/2 tsp salt. Add sautéed veggies and oats; stir until combined.
  2. Using your hands, add extra lean ground turkey and beef and mix until lightly combined. Like a 3 quart, 9x5 rectangular baking pan with foil and lightly pat in the mixture.
  3. Bake for 55-60 minutes or until internal temperature reaches 160 degrees Fahrenheit. 
  4. To make glaze: stir together 1/2 cup Sriracha ketchup, 1-2 tbsp brown sugar and 2 tsp Dijon mustard in a small bowl. Spoon over meatloaf for the last 25 minutes of baking. 
  5. Remove from oven, and let stand for 10 minutes before slicing.
  6. Slice, top with more glaze if ya want and enjoy!
