The PERFECT pancake for your macros!

I have posted recipes for protein waffles and pancakes before, but this recipe takes the cake. Less ingredients, great macros and just look at that volume!! Packed with 20g of protein without having to use whey protein powder! Yaaaaaaaaas 🙌


When I first discovered Kodiak pancakes, I immediately loved the macros. But, when I added and egg and substituted milk for water (for added protein), the pancakes came out flat :( So I added some ingredients that I found critical in my previous waffle/pancake mix and BOOM: fluffy, macro friendly pancakes! 

Prep & Cook Time: 15 minutes
Servings: 1
Macros: 20gP/22gC/2gF

Ingredients:
1/4 cup Kodiak protein pancake mix
1 tbsp coconut flour 
1 tbsp plain non-fat Greek yogurt
2 tbsp milk
2 egg whites (NOT liquid)
1/2 tsp vanilla extract

Directions:
1. Mix together all ingredients until smooth
2. Pour onto non-stick skillet sprayed with cooking spray on medium heat
3. Cook until bubbly, then flip and cook for another minute
4. Top with your favorites and enjoy!

I like to add pumpkin pie spice and cinnamon to the mixture for extra flavor. My favorite macro friendly syrup is Walden Farms
