Easy, Healthy Pumpkin Muffins with Cheesecake Frosting

Everyone loves a good pumpkin recipe this time of year. But how about one with only 3 main ingredients?? These were seriously so easy to make, and are so fluffy and flavorful. I am drooling just thinking about them! 

This recipe has been Cricket approved. Look at that VOLUME! *drooling.

Prep & cook time: 20 minutes
Servings: 3 muffins
Macros per muffin: 1gF/14gC/8gP {95 cals}


Ingredients for pumpkin muffin:
1/2 cup Kodiak protein pancake mix (can use any pancake mix, just adjust macros accordingly)
1/4 cup liquid egg whites
1/4 cup pumpkin puree
Sweetner (I use stevia), cinnamon and pumpkin pie spice to taste! 
{I used 1/2 packet Stevia, ~1/2 tsp cinnamon, ~1/2tsp pumpkin pie spice}
Ingredients for cheesecake frosting:
1 tbsp plain non-fat Greek yogurt
1 tbsp SS FF Jello cheesecake powder mix 

Directions:
1. Pre-heat oven to 350F and spray muffin pan with non-stick spray. 
2. Combine all ingredients and pour into pan.
3. Cook for 15-18 minutes
4. While muffins are cooking, mix together yogurt and cheesecake powder.
5. Let muffins cool for about 10 minutes, then spread frosting on top.
