Slow Cooker Taco Chicken & Cilantro Lime Quinoa

Tuesday, April 14, 2015's what's for dinner! And probably lunch..and then dinner again :) I love this recipe, and will definitely be making it again!

Ingredients for chicken:
~5lbs of white meat (breasts or tenders...I used tenders because they were cheaper)
1 can (14.5 oz) diced tomatoes, drained (I used fire roasted, but not necessary)
1 can (4 oz) green chiles, undrained
1 tbs cumin
1 tsp chili powder
1 tsp chipotle powder (optional)

Servings: 4-5

MACROS: For 1 cup
Fat: 2g Carbs: 5g Protein: 35g 

Place chicken on bottom, then spices, tomatoes and green chiles. Cook on low for 7-8 hours. The chicken will shred when you mix the ingredients around. 

Ingredients for quinoa:
1 cup dry quinoa (white or red)
1 lime
1 tsp chopped cilantro (or more if you want a stronger flavor)

Cook quinoa as directed, mix in lime and cilantro while cooling and let stand for 5-10 minutes. 
{Quinoa is also delicious the next day (or week lol) on salads for a refreshing change!}

Le finished product! I steamed up a bag of frozen broccoli (ate 3/4 of the bag) topped with Old Bay of course. I don't worry about my sodium intake, because I am young and healthy and do not have hypertension :)
