LEFTOVER CASSEROLE

Here is a crazy creation that I made up with some leftovers from the other night. I don't know about you, but I don't like eating the same thing for more than 2 nights in a row! 

Here is what I started out with (the leftovers): 
Red onion, mushroom and asparagus sauté  sun dried tomato marinated chicken tenders (from Trader Joes), and under that chicken is a spinach and tomato sauté. I ended up only using 4 chicken tenders.

These are the ingredients I added in
Sargento 6 cheese italian blend, 2% low fat cottage cheese, whole wheat penne, cherry tomatoes, red onion.
I halved 6 cherry tomatoes and added about 1 cup of cottage cheese. 
...then added 1/2 cup of the shredded cheese.
And finally the penne and a little cheese on top!

Preheat oven to 400, cover with foil, and cook for 30 minutes :) 


The final product! Let me tell you, it smells amazing!

I love making new creations with what I have in my fridge. What can you come up with?!


Don't forget about dessert! Vanilla frozen Greek yogurt with cinnamon :)
