HEY everyone! On this chilly, rainy day Cricket and I took a selfie and watched a lot of Grey's Anatomy. After crawling to the gym, lifting back & biceps and walking through the rain with no jacket, some chili seemed like a necessity! 

But, I made a few tweaks to it. 

Turkey Chili

1 lb ground turkey
1 white onion, chopped
2 tbs olive oil
1 tbs chili powder
1 tbs cumin
1 tsp dried oregano
black pepper to taste
garlic powder to taste
1 (15 oz) can crushed tomatoes
1 (14.5 oz) can diced tomatoes
1 3/4 cup chicken broth
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can kidney beans, rinsed and drained
1 (16 oz) can corn, rinsed and drained

NOTE: when buying anything canned, always look for "salt-free" or "reduced sodium". Salt is necessary for the preservation of most canned foods, so the rinsing and draining process is meant to remove any excess salt. 

Reduced fat shredded Mexican cheese
Multi-grain Club crackers

1. Heat the olive oil in a large pan on medium heat. Add the chopped onion, turkey, chili powder, cumin, pepper, garlic powder and oregano to the pan and cook until the turkey is brown.

Browned turkey and onion mixture.
2. Add black beans, kidney beans, corn, crushed tomatoes, diced tomatoes and chicken broth to the mixture and heat to a boil. Reduce heat and cook for 30 minutes. 

3. Remove from heat and top with your favorites!
