...or taco SALAD!! The only thing missing is avocado. They didn't have any at the grocery store :( how does that happen?!! 

Servings: ~4

So, here's what you'll need:
16 oz ground turkey {1 package}
1 zucchini
1/2 small red onion
1 green bell pepper
1 pack instant brown rice {2 servings}
1 cup cooked sweet corn
1 can Rotel orinigal
Olive oil 
Sriracha {optional, but recommended if you like some spice!}
Chili powder
Mrs. Dash original blend

Reduced fat Mexican blend shredded cheese 

1. Cook brown rice as directed on box. When rice is done, add 1 tbsp cumin, 1/2 tbsp chili powder, Rotel and corn. Simmer for 20 minutes or longer on medium-low. The longer it cooks, the better!

2. While rice is cooking, dice zucchini, chop onions and slice green pepper. 

3. Heat ~1/2 tsp of olive oil in pan and cook 1/4 of the chopped onions until clear {about 2 minutes}. Add turkey, zucchini, 1 & 1/2 tbsp cumin and 1 tbsp chili powder to pan, cook until turkey is brown. Once brown, mix in sriracha to taste {i used able 1 tbsp and I like it pretty spicy} and turn the pan on low. Drain some (~1 tbsp) of the liquid from the into another pan. 

4. Add the remainder of the onion as well as the green pepper into the pan with the tablespoon of turkey/zucchini liquid. Cook, covered, on medium for ~10 minutes or until the veggies are cooked to your liking.

...turkey taco-zucchini meat and cheese!! Look at that steam :) 

And why not have a glass of wine? Don't forget to drink lots of WATER!!!
