I am thankful for carbs. They are delicious and they keep me going. This is my first time making my own sauce and not using a store bought jar, so let me know what you think! I also love adding zucchini to just about anything--lots and lots of veggies!! 


1 tbsp olive oil
1 large zucchini diced 
1 large green bell pepper diced
1 cup cut baby portobello mushrooms
1/2 onion diced
2 cans (28 oz) whole peeled tomatoes
3 tbsp tomato paste
1 lb protein (ground beef, ground turkey, turkey sausage, etc.)
1 tsp dried oregano
1 tsp Mrs. Dash Italian blend
1 bay leaf
Garlic powder to taste
Salt to taste
Pepper to taste
1 box wheat spaghetti {HINT: look for "whole durum wheat" as the first ingredient}

1. Heat olive oil in a large pan on medium heat. Add zucchini, green pepper, mushrooms and onion to the pan and cook for about 5 minutes. 

2. Add the tomatoes and the tomato paste to the veggie mixture, as well as the COOKED protein of choice and all spices.

3. Let simmer, uncovered on medium heat for at least 30 minutes {the longer the better!} stirring occasionally. While this is cooking up, cook noodles as directed on box.

4. Serve over noodles and ENJOY!!

And if you love carbs like me, grab a roll of fresh whole wheat/grain bread, cook as directed and make a smiley face on your plate :) and wine because its Tuesday.
